This honey comes from native Florida and Georgia gallberry bush blooms.  It has a round, full flavor; and most of the Thomas family says "is just how honey should taste". We use Gallberry on everything, but if you haven't tried a pitcher of southern sweet tea sweetened with THIS honey... fix that stat. Fun fact: Gallberry honey can fluctuate each season slightly based on supplemental blooms, and it is the variety most sensitive to heat and light exposure. As it ages, the color darkens and the flavor becomes more pronounced.
